4 egg whites
1/4 tsp salt
1 1/2 cups icing sugar
1 cup shredded coconut

Directions

Preheat oven to 200°F. Line a baking sheet with parchment paper.

In a stand mixer fitted with the whisk attachment, whip egg whites and salt on medium speed until fluffy.

Increase speed to medium-high and gradually add icing sugar. Continue to beat for 2 to 3 minutes, until mixture is glossy and stiff.

With a piping bag or spoon, pipe or drop 12 rounds of meringue mixture 1-inch apart onto prepared baking sheet.

Sprinkle shredded coconut over the tops of the meringue rounds and bake for 1 to 2 hours, until meringues have dried out and are slightly off-white. Cool completely on a wire rack.

With a small ice cream scoop or spoon, portion Häagen-Dazs® pineapple coconut ice cream and sandwich between two like-sized meringues.
